Job Description

Report to the Brand Executive Chef
Oversee the whole Kitchen operation
Full Supervision of the Kitchen Crews

Manage the opening and closing of the kitchen
Ensure kitchen is properly cleaned on a regular schedule, food is disposed of properly and the kitchen meets all sanitary standards
Maintain accurate food‑ordering and stocking levels including all kitchen materials through e‑Procurement
Prepare the ingredients and make the appetisers as per company SOP
Prepare and make the soup broth as per company SOP
Ensure food quality and its presentation
Manage the agreed food cost targets in line with the agreed budget
Manage all kitchen‑related office administration and all Operations issues
Ensure work safety around kitchen equipment and monitor and deal with any maintenance issues
Manage and maintain correct staffing levels
Plan duty roster, job duties and rest days for Kitchen team
Identify and take an active role in the recruitment of new staff members
Participate in planning new menus to improve the sales and profitability of the Noodle Bar
Assist in achieving financial targets set for the Noodle Bar
Manage food costing to minimise unnecessary wastage
Ensure the entire kitchen team are aware of their responsibilities in respect of health and safety in the workplace and have training to work in a kitchen environment
Ensure company food hygiene management system is in place and fully understood by all the team
Ensure kitchen team comply with the policy on personal hygiene and uniform
Ensure strict adherence to regulations where applicable
Undertake regular audits of all areas within the kitchen and storage areas to ensure complete adherence to agreed policies
Provide advice and guidance as necessary to Kitchen member
Communicate daily or weekly financial targets to all members of the culinary team as appropriate
Ensure company control procedures in respect of food production, portion control and stock management are fully implemented
Update GRN and perform e‑Procurement
Complete goods received in a timely and accurate manner
Adhere to company’s standard operating procedures
Any other appropriate duties and responsibilities as assigned
Requirements
Minimum 6 years of relevant experience in culinary/kitchen management and supervisory experience
Hands‑on experience in preparation of beef noodle soup and appetisers
Knowledge of cost/inventory management would be an added advantage
Basic PC‑literacy
