Job Responsibilities
- Support the Executive Chef and the team ensuring smooth daily operations.
- Manage and handle all administrative duties for the department, including team members, payroll, records, scheduling, duty rosters, purchase requests, market list orders, and recipe costing as per company operating systems.
- Assist in menu preparation, recipe card creation, and plating guides.
- Work closely with receiving and purchasing teams on daily operations to control raw material quality standards.
- Ensure the quality of food items according to standards, maintaining sanitary conditions and applying "First In, First Out" best kitchen practices.
- Monitor food production to ensure compliance with recipes and specifications.
- Adhere to standards of food presentation, production, and portion control.
- Support the Hygiene Manager and Executive Chef in achieving the highest food safety standards.
- Ensure the safe and proper use of equipment and guide culinary colleagues accordingly.
- Provide accurate recipes and training to line cooks for consistent food quality.
- Assist team members with job functions and on-the-job training as needed.
- Estimate food consumption to schedule purchases and requisitions.
- Minimize food waste and spoilage to control expenses within budget.
- Prepare daily work lists and train staff on mise en place, prioritization, and time management.
- Assist in providing daily briefings to team members about updates and procedures.
- Provide feedback on job performance to foster a trusting and transparent work environment.
- Maintain high productivity levels through effective duty roster management and organize annual leave accordingly.
- Maintain high grooming standards for self and subordinates to ensure good customer relations.
- Work within all areas of the hotel, including offices and kitchens.
Job Requirements
- Diploma/Degree in Culinary Arts, Pastry, or related field preferred.
- 7 years of managerial experience in a high-volume 4-5 star hotel or restaurant.
- Strong culinary background with knowledge of Asian, Western, Italian, and Japanese cuisines.
- Understanding of modern culinary concepts across various cuisines.
- Proficiency in using computers for administrative tasks.
- Good knowledge of basic accounting and food cost calculations.
- Excellent logistical, culinary, and leadership skills.
- Ability to promote safety and sanitation habits.
- Willing to work shifts.
