Role Overview

Are you a dedicated hygiene and sanitation professional ready to establish, lead, and elevate hygiene standards for a new hotel opening?

We are seeking a highly skilled Hygiene Manager to oversee and implement all hygiene, sanitation, and food safety programs for this pre‑opening project. In this pivotal role, you will develop comprehensive hygiene systems, ensure full regulatory compliance, and foster a culture of cleanliness, safety, and operational excellence across all hotel departments.

What Will I Be Doing?
Hygiene & Food Safety Leadership
  • Develop, implement, and oversee the hotel’s hygiene and sanitation strategy, ensuring compliance with HACCP, local regulations, and Hilton brand standards.
  • Establish and maintain a robust food safety management system across all culinary, service, and storage areas.
  • Monitor the proper handling, storage, labeling, and traceability of food items to ensure maximum safety and consistency.
  • Conduct routine hygiene audits and inspections across all hotel departments, identifying risks and ensuring corrective action is taken promptly.
Operational Oversight
  • Lead the implementation of hygiene protocols for all back‑of‑house and front‑of‑house operations during pre‑opening and beyond.
  • Ensure all areas—including kitchens, stewarding, F&B venues, receiving docks, and staff facilities—meet or exceed sanitation standards.
  • Monitor cleanliness and operational readiness of all equipment, coordinating with engineering and stewarding teams on maintenance and preventive care.
  • Oversee waste management procedures, pest control activities, and chemical usage to ensure safety and efficiency.
Training & Team Development
  • Design and deliver comprehensive training programs on hygiene, sanitation, HACCP, and safe food‑handling practices for all relevant departments.
  • Mentor the culinary, service, and stewarding teams to build a strong culture of accountability and hygiene excellence.
  • Maintain up‑to‑date SOPs, manuals, and compliance documentation to ensure consistent hygiene practices across the hotel.
  • Partner with Executive Chef, F&B Managers, Housekeeping, and other key departments to support seamless, safe, and efficient operations.
  • Engage with internal stakeholders to ensure guest areas, staff facilities, and operational zones meet the highest cleanliness standards.
  • Support guest engagement when necessary, addressing hygiene‑related concerns and reinforcing guest confidence in the hotel’s safety practices.
Compliance & Continuous Improvement
  • Stay updated on local, national, and international health regulations, ensuring full compliance at all times.
  • Maintain detailed records, reports, and audit results for regulatory and internal requirements.
  • Lead continuous improvement initiatives to enhance hygiene processes, reduce risks, and optimize operational efficiency.
What Are We Looking For?
  • Bachelor’s degree in Food Safety, Environmental Health, Hospitality Management, or a related field.
  • Proven experience in hygiene management, food safety, or sanitation leadership within hotels, resorts, or large‑scale F&B operations.
  • Pre‑opening experience is an advantage.
  • Strong knowledge of HACCP principles, local health regulations, and international hygiene standards.
  • Excellent communication, leadership, and training skills with the ability to influence cross‑functional teams.
  • Exceptional organizational and documentation skills, with a detail‑oriented and proactive approach.
  • Ability to conduct audits, identify gaps, and implement corrective and preventive actions.
  • HACCP certification or equivalent food safety qualification is mandatory.
  • Fluency in English; additional languages are an advantage.
