A progressive restaurant in Kuala Lumpur is looking for a Chef de Partie with a focus on Japanese cuisine, specifically sushi preparation. The ideal candidate will manage kitchen operations, prepare and serve high-quality Japanese dishes, and uphold cleanliness and food safety standards. Manage and execute daily operations for your assigned kitchen section
Prepare and serve Japanese dishes, including sushi and sashimi, according to our standards
Handle, cut, and store raw fish and sushi ingredients safely and correctly
Maintain high standards of cleanliness, hygiene, and food safety
Work closely with the Head Chef and kitchen team during service
Assist with prep planning, stock control, and minimising wastage
Support and guide junior kitchen staff when needed
Prior experience working in a Japanese restaurant
Able to prepare sushi (nigiri, maki, sashimi)
Good knife skills and understanding of ingredient handling
Able to work calmly and efficiently during service hours
Strong sense of responsibility, teamwork, and professionalism
Passion for food, learning, and continuous improvement
