Job summary
A leading Japanese restaurant group in Singapore is seeking a skilled individual with over 10 years of experience operating Japanese restaurants. Responsibilities include ensuring high standards in food quality and safety, overseeing kitchen staff, and maintaining hygiene in cooking areas. Proficiency in Japanese is required for effective communication with staff and suppliers. This position calls for strong knowledge in various sushi types and seasonal ingredients, as well as excellent communication skills with guests.
Qualifications
- 10+ years of experience in operating Japanese restaurants.
- Good knowledge of seasonal Japanese ingredients.
- Ability to oversee kitchen staff and maintain high hygiene standards.
Responsibilities
- Ensure high standards of food quality and safety.
- Monitor food stock and place orders as needed.
- Communicate effectively with guests and suppliers.
Skills
- With 10 years+ experience in operating 2 or more Japanese restaurants
- Ensure products used for dishes are of a high standard
- Ensure health, safety legislation and guidelines are implemented, adhered to and reviewed regularly
- Responsible for daily sales
- Good communication skills with guests
- Good knowledge of Japanese ingredients (Seasonal fish, meat and vegetables)
- Good knowledge of Japanese authentic cooking style
- Maintain high hygiene standards in all cooking areas (Sushi counter and Kitchen)
- Monitor food stock and place orders, as needed
- Good contacts with suppliers for Japanese products
- Good knowledge of various sushi types
- Ability to work both fast and accurately
- Team spirit
- Oversees all other kitchen staff
- High loyalty for company
- Able to communicate and write in Japanese with Japanese customers and suppliers
