Role Overview

Are you well-versed in Halal requirements, local Malaysian regulations, and passionate about ensuring full compliance across culinary and service operations?

We are seeking an experienced Halal Manager to lead and manage Halal compliance for the hotel — especially critical during pre-opening and ongoing operations. In this role, you will oversee all aspects of Halal certification, supplier vetting, kitchen & service compliance, and staff training — ensuring that our Muslim guests receive an authentic, safe, and fully Halal experience.

What Will I Be Doing? Halal Compliance & Certification Management
  • Lead the process to obtain and maintain Halal certification from relevant Malaysian authorities / Halal certifying bodies (e.g. compliance with Department of Islamic Development Malaysia (JAKIM) or other recognized Halal bodies).
  • Ensure all kitchen outlets, back-of-house areas, storage, procurement, and service operations comply with Halal standards and local legislation.
  • Develop, implement, and manage comprehensive Halal policies, SOPs, and compliance frameworks tailored for the hotel.
  • Maintain accurate documentation and records for ingredients, suppliers, processes, and audits as required for certification and regulatory compliance.
  • Vet all suppliers, ensuring that meat, poultry, ingredients, and products are sourced from certified Halal providers.
  • Verify documentation and Halal certificates for all incoming supplies, including periodic re-verification and audits.
  • Establish and maintain a trusted supplier database, with periodic reviews to ensure ongoing compliance.
  • Coordinate procurement in a way that supports cost control, quality standards, and Halal compliance.
  • Oversee segregation (where required) of Halal and non-Halal items, storage areas, preparation zones, utensils, equipment, and workflow to avoid cross-contamination.
  • Ensure strict compliance with hygiene, sanitation, and food safety standards in all kitchen and service areas.
  • Supervise proper cleansing, storage, labeling, and handling of utensils, cookware, and service ware according to Halal and hygiene protocols.
  • Conduct regular inspections and audits of kitchen, storage, and service areas to verify compliance with Halal standards.
Training & Team Development
  • Design and lead comprehensive training programs for culinary, stewarding, procurement, and service teams on Halal principles, local laws, and company Halal policies.
  • Promote awareness and understanding among all Team Members about Halal compliance — from ingredient sourcing to service delivery.
  • Ensure ongoing refresher training and clear communication of any regulatory updates or changes in Halal policies.
  • Foster a culture of accountability, respect, and integrity with regards to Halal compliance across all departments.
Guest Experience & Communication
  • Work closely with F&B, culinary, and service teams to ensure a seamless, respectful, and genuine Halal dining experience for guests.
  • Communicate Halal status clearly to guests, including during events, banquets, room service, and everyday dining.
  • Address guest inquiries or concerns about Halal compliance promptly and professionally.
  • Collaborate with Marketing and Operations to promote the hotel’s Halal offerings in compliance with branding and guest expectations.
Pre‑Opening & Regulatory Preparation
  • Participate in pre-opening planning to design kitchen layout, storage areas, and workflow to support Halal compliance from Day One.
  • Liaise with local authorities, halal certifiers, and regulatory bodies to ensure all necessary permits, inspections, and certifications are obtained ahead of opening.
  • Develop control systems, checklists, and documentation workflows to facilitate smooth Halal certification and continuous compliance.
What Are We Looking For?

A successful Halal Manager for Hilton in Malaysia should demonstrate:

  • Bachelor’s degree or relevant diploma in Food Safety, Hospitality Management, or related field is preferred.
  • Thorough knowledge of Malaysian Halal regulations, certification processes (e.g. JAKIM guidelines), and Halal food handling requirements.
  • Proven experience managing Halal compliance in hotels, restaurants, or large-scale F&B operations.
  • Strong understanding of food safety, hygiene standards, and segregation practices for Halal vs. non-Halal operations.
  • Excellent organizational, documentation, and record-keeping skills.
  • Strong communication and training skills, with the ability to educate and lead cross-functional teams.
  • Integrity, attention to detail, and commitment to upholding ethical and Halal standards.
  • Fluency in English; knowledge of Bahasa Malaysia or other local languages is an advantage.
  • Pre‑opening experience and familiarity with hotel operations is a plus.
