Do you see yourself as Head Baker at Regent Bali Canggu?

As a Head Baker, you will support the Culinary in overseeing the bakery section and delivering exceptional guest services. You are responsible for taking care of entire FSMS (Food Safety Management System) in the hotel, with regard to food safety. Ensuring the compliances to all the local /IHG food safety audits throughout the year.

Your day to day

• Observes sales floor and back stock conditions
• Prepares and produces such bakery and specialty products as pastries, cakes, pies, muffins, breads, puddings, parfaits, frosting, cookies, rolls
• Requisition supply items as needed from storerooms
• Follow HACCP guidelines and ensure that colleagues comply with HACCP guidelines Minimum 2 years working experience as baker in well-known international hotel brands
• Prepares and bakes all bakery items for menu and catered events following standardized recipes
• Looks after the full bread and pastries production line
• Do not entertain unannounced visits from food or material suppliers
• Ensure the food cost of his Bakery is in line with budget kitchen operating supplies, and kitchen energy costs
• Estimates baking needs, requisitions adequate supplies, inventories supplies, and keeps records of products made and used
• Coordinates in details on the restaurant / banquet / food production, and all specific duties to all employees
