Description
1. Ensure the quality and quantity of all Meat, Poultry, Game, small goods, fish, and shellfish products, recipe cards, photographs, and instructions are as per the standards and procedures. Inspect all meat, seafood, and poultry according to established specifications and standards, and perform yield testing.
2. Maintain good knowledge of cuisines to carry out duties and responsibilities efficiently and productively.
3. Prepare, cut, and portion food for all outlet kitchens efficiently and economically.
4. Operate, maintain, and properly clean kitchen equipment.
5. Date all food containers and rotate stock as per policies.
6. Assist the Chef De Cuisine and Sous Chef in the day-to-day kitchen operations and maintain a high standard of product quality; work closely with all chefs regarding food preparation.
