A leading food production company in Malaysia seeks an experienced R&D professional to oversee product development and sensory evaluations. The ideal candidate will have at least 5 years of experience in a professional kitchen and a degree in food technology or a related field. Responsibilities include managing product development activities, coordinating quality control measures, and conducting trials for new ingredients.
To carry out R&D projects such as formulation, sample preparation and sensory evaluation.
To initiate research & development efforts to create new products.
To establish/ maintain and update related work instructions, including analysis method, specification (recipe, ingredients list, nutritional fact) and documents of all projects and samples status on time.
To conduct and monitor the preparation of prototype/ sample and to determine the process specifications predetermined in the lab.
To improve and revise existing product formulations and processes if necessary to optimize productivity and cost.
Selection and quality control of raw materials used in products.
To involve in the R&D, data collection and end-product evaluation on any testing carried on at the plant scale.
Manage product development activities and participate in cross-departmental activities resulting in meeting food safety and quality objectives.
Initiate and actively involved in new product sensory and keeping quality evaluation for improvement plan.
Conduct R&D on the new ingredients selection purposes whenever required which involve both laboratory and plant scale.
Conduct production trial of new/alternative/substitute ingredients and processes in collaboration with the operation team.
Coordinate and report the end-product testing for the routine test of raw materials.
Requirement:
Candidate must possess at least a Professional Certificate, Diploma, Advanced/Higher/Graduate Diploma, Bachelor's Degree, Post Graduate Diploma, Professional Degree, Food Technology/Nutrition/Dietetics or equivalent.
Min 5 years and above of working experience in theprofessional kitchen.
Preferably Senior Executives specializing in Food Technology/Nutritionist or equivalent.
Excellent knowledge of basic techniques, flavour combination & innovation.
