The Production Manager is responsible for overseeing all production operations within the central kitchen or manufacturing unit. This role ensures product consistency, food safety, inventory accuracy, and efficient workflow to support all Ayam Gepuk AG outlets. The Production Manager leads the production team, optimizes processes, and ensures that daily output meets quality and quantity requirements.
Key Responsibilities
A. Production Planning & Operations
- Plan daily and weekly production schedules based on outlet demand
- Ensure timely preparation, processing, and packaging of products
- Monitor workflow and optimize production efficiency
- Ensure SOPs are followed in every stage of production
B. Quality Control & Food Safety
- Ensure all products meet company quality standards
- Enforce food safety regulations including hygiene, sanitation, and HACCP practices
- Conduct quality checks on raw materials and finished products
- Identify quality issues and implement corrective actions
C. Team Leadership & Staff Management
- Supervise production supervisors, line leaders, and production staff
- Conduct training on SOPs, hygiene, and safety
- Schedule manpower and manage shift rotations
- Monitor staff performance and discipline
D. Inventory & Supply Management
- Monitor stock levels of raw materials, packaging, and supplies
- Coordinate with purchasing to ensure sufficient material availability
- Reduce wastage through proper storage, handling, and control
- Maintain accurate inventory records
E. Equipment & Facility Management
- Ensure production equipment is properly maintained and functional
- Report and coordinate repairs or servicing with the maintenance team
- Enforce safety standards and monitor workplace conditions
- Ensure cleanliness of production areas at all times
F. Reporting & Documentation
- Prepare daily production reports, quality reports, and wastage reportsUpdate management on production performance and operational issues
- Maintain accurate documentation for audits and compliance
Required Qualifications
- Diploma/Degree in Food Technology, Food Science, Manufacturing, Operations, or related field
- 3–5 years experience in F&B production, central kitchen, or food manufacturing
- Strong understanding of food safety (HACCP, GMP, Halal compliance)
- Strong leadership and communication skills
- Ability to solve problems and make decisions under pressure
- Computer literate (Excel, reporting systems, inventory systems)
