In this position you will be responsible for:
- Plan the catering for group or an event of function
- Prepare delicious meals from our seasonal menus, rich in variety, flavour and nutrition.
- Develop menus and create specialty food for fine dining experiences and functions.
- Manage rosters, support menu development, trial new recipes and cater to different dietary needs.
- Operate with health and safety as a key consideration at all times.
- Plan and control menu-based catering
- Prepare and cost menus, whilst carrying out catering control procedures
- Prepare, cook and present food
- Develop menus to meet special dietary and cultural needs
- Monitors overall talent within the ESS kitchens to ensure all employees have the skills and abilities to deliver upon any implemented operational initiatives
- MUST happy to do multiple task include cleaning, reception or all other work in the lodge if require.
About you:
- Extensive experience as a Head Chef, leading a team and running a kitchen catering for large groups or functions
- Outstanding communication skills with a reliable, approachable and professional manner
- Hold a qualification in Cookery or equivalent
- Minimum of 4 years proven work record with written references to show levels of expertise and experience
- A minimum of four years of relevant experience as a chef may be accepted as an alternative to the formal qualification requirements
- The ability to work under pressure, have a flexible approach and attitude, and be physically fit and reliable
