About the Role – Opening Restaurant Manager

NIKUNO YOICHI is preparing to open an exciting new Japanese dining concept in Sri Petaling, Kuala Lumpur, and we are looking for a passionate and experienced Restaurant Manager to lead this journey from day one.

This is not just another management role. As the Opening Restaurant Manager, you will play a pivotal role in shaping the culture, standards, and success of a brand-new restaurant under the renowned NIKUNO YOICHI name. You will have real ownership, decision‑making authority, and the opportunity to build and lead your own team.

What You’ll Be Doing
  • Lead and inspire a full restaurant team, including service staff, chefs, and hosts, setting the tone for excellence from opening day
  • Oversee both front‑of‑house and back‑of‑house operations to ensure seamless service and a premium guest experience
  • Establish operational standards, workflows, and service culture for a brand‑new outlet
  • Implement inventory control, cost management, and profitability strategies
  • Recruit, train, and develop staff, building a strong and motivated team from the start
  • Analyse sales performance and operational data to drive continuous improvement
  • Ensure full compliance with health, safety, and licensing regulations
  • Serve as the face of the restaurant, handling guest feedback and creating lasting customer relationships
What We’re Looking For
  • Minimum 3 years of management experience in a high‑end Japanese restaurant or premium dining environment
  • Strong knowledge of Japanese cuisine, ingredients, service style, and hospitality standards
  • Proven leadership skills with the ability to build, motivate, and retain a high‑performing team
  • Excellent communication and interpersonal skills
  • Solid experience in cost control, operational efficiency, and revenue growth
  • Comfortable using Microsoft Office and restaurant management systems
  • A hands‑on leader with a strong sense of ownership and accountability
