Job description
Position Summary:
  • Supervise and direct kitchen staff in meal preparation and cooking according to planned menu. Ensure a clean, efficient, economical kitchen and food service.
  • Preparation, handling and production of produce and products according to the stipulated guidelines of culinary standards and sanitation systems put in place by the Chef and Kitchen Executive/ Coordinator for IPD/ Café production.
  • Inspect and audit products used in the daily preparation of meals in the IPD/ Café to the highest standards of controls and taste.
Duties and Responsibilities:
  • Inspect raw materials received and report any sub-standard products to the Chef.
  • Prepare requisitions and maintain proper inventories and storage systems as per set standards.
  • Ensure minimum wastage of products in preparation schedule.
  • Maintain set standards of the hygiene, sanitation and dietary balance of IPD meals.
  • Assist the Chef in the menu planning and presentation.
  • Ensure the product is as per standardized recipes and diet restriction chart.
  • Ensure visitor and staff meals are produced and presented as per menu and set standards.
  • Ensure safe and proper handling, coding and cleaning of kitchen equipment and utensils.
  • Monitor production and taste and react to comments by staff and customers to better production items with feedback to the Chef for better menu production and balance.
  • Perform other duties as assigned.
Education and Requirements:
  • Diploma/ Certificate in Culinary/ Food Preparation.
  • Preferably with 1-2 years of experience in a Hospital or Hotel food production.
  • Be able to speak and write in English and Bahasa Malaysia.
