About the Job

Based at the Mandarin Oriental, Kuala Lumpur within the Culinary Department, the Head Food Checker (Chinese Cuisine) is responsible for the preparation, service, hygiene quality and presentation across Banquet, All‑Day Dining, Club Floor and a la carte. The Head Food Checker reports to the Executive Chinese Chef/Chinese Sous Chef.

Responsibilities
  • The Head Food Checker is responsible for the station assigned by the Chinese Sous Chef.
  • Assists the Chinese Sous Chef to prepare food in accordance with the Standard Operating Procedures.
  • Prevents spoilage and overproduction through daily checks.
  • Trains and motivates subordinates and maintains communication between supervisor and subordinates.
  • Maintains cleanliness and hygiene standards in the assigned area.
Qualifications & Experience
  • Able to read Chinese characters.
  • Team player, cooperative.
  • Friendly, outgoing, enthusiastic, passionate.
  • Well‑rounded culinary skills.
  • Minimum completed Secondary School education.
  • Apprenticeship in Chinese Kitchen.
