About the Location

Four Seasons Hotel and Residences is part of a 65‑storey mixed‑use tower that will include 242 Four Seasons Private Residences, 27 serviced apartments, a 209‑key Four Seasons Hotel and a six‑floor, 250,000 square‑foot luxury retail podium, collectively known as Four Seasons Place Kuala Lumpur. The Hotel introduces several unique dining outlets to the city, including a Cantonese restaurant, lobby and rooftop pool bars, and an all‑day dining restaurant with sweeping views of the Petronas Twin Towers.

Executive Pastry Chef

The Four Seasons Hotel Kuala Lumpur is looking for an Executive Pastry Chef. Candidates with passion for excellence, expertise in a variety of desserts, sweets and breads, and proven leadership experience are invited to apply for a career with Four Seasons. As a member of the culinary team, the Executive Pastry Chef works across disciplines to deliver an exceptional experience to the guests.

Responsibilities
  • Direct and control the activities of the Pastry/Bakery Kitchen.
  • Assure that standards are met, guests and employees are satisfied, and problems are promptly resolved.
  • Take actions that maximize the profit of the division.
  • Plan, organise, control and direct the work of employees responsible for preparation of sweet items, pastries, cakes, ice creams, sorbets, fruit compotes, breads, chocolates and show pieces while ensuring superior quality and consistency.
  • Coordinate the selection, training, development, and evaluation of employees in the Pastry/Bakery Kitchen through effective supervision and leadership to ensure that established cultural and core standards are met.
  • Assist in the planning and development of recipes and ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration.
  • Assist with the controlling of labour and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
  • Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen.
  • Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications and foster an awareness of the importance of food preparation and quality.
  • Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.
  • Ensure consistent quality and presentation of menus under his/her supervision.
  • Constantly inspect taste, temperature, portion size and visual appearance.
  • Ensure strict adherence to recipes and presentation standards.
  • Assist in the development of new dishes and restaurant menus.
  • Ensure strict maintenance of food and personal hygiene standards in the department.
  • Adhere to food cost targets.
  • Consistently monitor quality of ingredients; assist in purchasing and receiving of foodstuff; ensures optimum storage and rotation of raw materials.
  • Interact with guests in a personal manner and create special dining experiences.
Qualifications
  • 10 years’ experience in a similar position within 5-star hotels or resorts. Experienced in handling banquets at a minimum of 300 pax. Experienced in managing multiple outlets with different concepts.
  • Must have a firm knowledge of the local market in pastry/bakery.
  • Knowledge of food cost controls in a high-volume luxury environment.
  • Strong leadership and interpersonal skills.
  • Able to prioritise and adapt to the changing needs of the operation.
  • Work well under pressure of meeting production schedules and timelines.
  • Certificate in a related discipline.
  • Able to work a flexible schedule with the ability to work all shifts, weekends and holidays as per business demands and needs.
  • Excellent reading, writing, and oral proficiency in English language.
  • Must be able to speak, read, and write Bahasa Malaysia.
  • Must have the right to work in Malaysia.
