Job description

As a CDP (Malay Banquet) at Hotel Casuarina Meru', you will play a crucial role in delivering exceptional Malay cuisine and dining experiences to our guests. This full-time position is based in our hotel located in Ipoh, Perak, where you will be responsible for preparing and cooking a variety of authentic Malay dishes.

What you’ll be doing
  • Supervise and ensure strict adherence to all Malay Banquet preparation schedules and recipes.
  • Guarantee high-quality taste, texture, and presentation for all banquet dishes.
  • Control the cooking processes for all main and side dishes in the Malay Banquet section.
Operations & Standards
  • Ensure all kitchen stations and equipment meet HACCP and hygiene standards.
  • Monitor and manage raw material stock levels to minimize waste.
  • Assist the Sous Chef with accurate ingredient ordering based on event needs.
  • Help control food costs through optimized ingredient usage.
Team Leadership & Communication
  • Train and mentor Commis/Assistant Cooks in techniques and kitchen procedures.
  • Serve as the main communication link between the team and the Malay Chef/Senior Sous Chef.
  • Quickly resolve daily operational issues within the Banquet section.
  • Assist in drafting and managing the duty roster (schedule).
Safety & Compliance
  • Ensure rigorous food safety protocols, especially correct storage temperatures.
  • Confirm safe handling of all kitchen equipment and immediately report any malfunctions.
