Responsibilities
  • Assist in the preparation and cooking of inflight hot meals according to standard recipes and airline specifications.
  • Ensure meals are consistent in taste, portion, and presentation.
  • Prepare sauces, soups, and main hot dishes under the supervision of the Executive Sous Chef.
  • Maintain strict adherence to food safety, hygiene, and sanitation standards in compliance with airline and local regulations.
  • Conduct checks on temperature, freshness, and portioning of inflight meals.
  • Ensure compliance with special dietary requirements (e.g., halal, vegetarian, diabetic meals).
  • Supervise and coordinate junior kitchen staff during inflight meal production.
  • Monitor inventory, stock rotation, and proper handling of ingredients.
  • Maintain cleanliness and organization of hot kitchen workstations.
  • Support and mentor junior staff in hot kitchen operations and inflight meal preparation.
  • Collaborate with the culinary team to ensure timely production and delivery of meals.
  • Assist in controlling food costs and minimizing waste.
  • Suggest cost‑effective solutions while maintaining quality and compliance with airline standards.
What we're looking for
  • Minimum 2–3 years of experience as a Sous Chef or in a similar role within a high‑volume, fast‑paced kitchen environment.
  • Strong working knowledge of various cooking techniques, food preparation methods and kitchen equipment.
  • Proven ability to work well under pressure, multitask and manage priorities effectively.
  • Excellent communication and leadership skills, with the ability to motivate and inspire a team.
  • Passion for the culinary arts and a commitment to delivering exceptional dining experiences.
  • Flexibility to work in a dynamic, cross‑functional environment and adapt to changing demands.
Qualifications & Skills
  • Diploma, Certificate, or equivalent in Culinary Arts or related field.
  • Previous experience in hot kitchen operations, preferably in‑flight catering or airline food production.
  • Knowledge of hot meal preparation, portion control, and plating for in‑flight service.
  • Good teamwork, communication, and interpersonal skills.
  • Good written and verbal communication skills in Bahasa Melayu and English.
  • Ability to work under pressure in a fast‑paced environment.
  • Knowledge of food safety regulations and kitchen hygiene standards.
