Job description for a Chef De Partie (Hot Kitchen - Chinese Cuisine) with a professional culinary service provider serving aviation, healthcare and institutional sectors in Brunei Darussalam. The company operates a restaurant group specializing in hot kitchen operations and Chinese cuisine, serving both traditional and contemporary dishes.

Job position: Chef De Partie (Hot Kitchen - Chinese Cuisine)

Work Location: Brunei, Central Kitchen (Accommodation provided)

Responsibilities
  • Prepare, cook and present dishes, ensure consistency in taste, quality, portioning and presentation.
  • Manage the section and supervise cooks and commis to ensure smooth operation.
  • Maintain strict quality control measures for food presentation, flavor and consistency, ensuring meals meet the company’s expectations.
  • Food Safety and hygiene: Ensure adherence to food safety regulations such as proper storage, transportation and preparation to prevent contamination and ensure passenger health.
  • Collaboration and Training: Work closely with the Senior Sous Chef and other departments in menu planning and recipe development for Chinese Cuisine.
Requirements
  • Minimum 3-5 years experience in professional kitchen with at least 2 years specializing in Chinese Cuisine / Hot kitchen / wok cooking
  • Prior experience in hotels, restaurants or catering operation preferred.
  • Strong understanding of food safety and hygiene regulation, Halal regulations (HACCP certified is a plus)
  • Ability to work under pressure and meet tight deadlines.
  • Creative and passionate about food with strong attention to detail.
  • Ability to collaborate with diverse teams and communicate effectively with all levels
  • Flexibility to work various shifts, including early morning, late night and weekends.
  • Diploma / Certificate in Culinary Arts or equivalent.
