Job summary
A prominent hospitality group in the UK is seeking a Senior Sous Chef to join their Steak on Six Restaurant at their Newport location. The role emphasizes leadership within the kitchen team, ordering and managing food supplies, and ensuring outstanding service quality. Ideal candidates have at least 5 years in a 4/5 star establishment, strong menu costing skills, and a proven track record in kitchen management. Qualifications
- Minimum of 5 years in a 4/5 star hotel or large reputable restaurant with at least 1 AA Rosette.
- Experience in leading a team of 5+ kitchen staff.
Responsibilities
- Order all food items from suppliers as required.
- Ensure food items are received and stored correctly.
- Liaise with management for effective service.
- Minimise waste to protect the environment.
- Lead the kitchen team and communicate with customers for feedback.
Skills
Education
- Order all food items as per requirement from the dry store and external suppliers
- Ensure that all food items that are purchased are received and checked against the invoice, then stored in the correct manner
- Liaises with the Restaurant Manager/Banqueting Manager on a daily basis for an efficient service
- Ensure that resources are used effectively, minimising waste to protect our environment and to reduce costs
- Be responsible for the leadership of the team and individuals including frequent periods of internal/external customer contact to attain feedback

AAA level 3 or equivalent
- A full understanding of menu costing and menu planning
- A full understanding of HACCP
- 5 years minimum at a 4/5 star Hotel and/or large reputable restaurant with at least 1 AA Rosette
- Experience leading a team of 5+ kitchen staff
- Food hygiene level 3, Craft Trainer or Train the Trainer
