Job Description

WHAT'S THE JOB?

Manage the overall operation of food preparation, production, ordering, scheduling, payroll, and assist with training and onboarding of new hires. The Sous Chef will also support menu planning, recipe development, testing new products, and recipe management as needed.

The main responsibilities include, but are not limited to:

  • Plan the production of rotating menus;
  • Supervise productivity and ensure compliance with Horizon North standards and procedures, including health, safety, and quality;
  • Provide training and support to staff with a focus on continuous improvement;
  • Manage food requirements in line with purchasing and supply processes;
  • Participate in cost and budget management to meet financial goals and ensure client satisfaction;
  • Handle human resources and resolve potential conflicts;
  • Ensure food is prepared according to MAPAQ and Horizon North hygiene and safety standards;
  • Ensure safe and efficient use of cleaning products;
  • Maintain professional relationships with employees and clients;
  • Understand and implement dietary restrictions such as allergies and vegetarian needs in menu development and food prep;
  • Conduct monthly inventory.

QUEL EST LE TRAVAIL ?

Diriger l’ensemble des opérations liées à la préparation et la production des repas, aux commandes, à la planification des horaires, à la paie, ainsi qu’à la formation et l’intégration des nouvelles recrues. Le Sous-chef participe également à l’élaboration des menus, au développement de recettes, aux tests de nouveaux produits et à la gestion des recettes, selon les besoins.

Les tâches et responsabilités du poste de Sous-chef incluent, mais ne se limitent pas à :

  • Planifier la production des menus rotatifs;
  • Superviser la productivité et la conformité avec les standards et procédures d’Horizon North, incluant la santé, sécurité, et la qualité;
  • Offrir de la formation et du support aux employés dans une optique d’amélioration continue;
  • Planifier et gérer les besoins alimentaires selon les processus d’achat et d’approvisionnement;
  • Participer à la gestion des coûts et des budgets en collaboration avec la direction pour atteindre les objectifs financiers et maintenir la satisfaction du client;
  • Gérer les ressources humaines et résoudre les conflits potentiels;
  • S’assurer que la nourriture est préparée selon les normes d’hygiène et de sécurité du MAPAQ et d’Horizon North;
  • S’assurer de l’utilisation sécuritaire et efficiente des produits de nettoyage;
  • Entretenir des relations professionnelles avec les employés et les clients;
  • Comprendre et appliquer les restrictions alimentaires telles que allergies et végétarisme dans l’élaboration des menus et la préparation;
  • Effectuer l’inventaire mensuel.

Qualifications

WHO ARE WE LOOKING FOR?

  • Diplôme en hôtellerie, restauration ou expérience équivalente en formation technique ou expérience connexe;
  • Expérience en cuisine végétarienne;
  • Expérience en production alimentaire à volume élevé;
  • Certification en gestion de la sécurité alimentaire MAPAQ fortement recommandée;
  • Minimum de 10 ans d’expérience en gestion d’équipes de cuisine;
  • Expérience en gestion des coûts alimentaires et de main-d’œuvre;
  • Connaissance approfondie des différentes stations en cuisine : Pâtisserie, Déjeuners, Buffet chaud et froid, Service en grande quantité;
  • Maîtrise des compétences informatiques – Suite Microsoft Office (Word, Excel, PowerPoint, Outlook) et logiciels de planification;
  • Maîtrise de l’anglais parlé et écrit – niveau C (la maîtrise de l’anglais est obligatoire pour communiquer efficacement avec les collègues sur site).
