A leading bakery innovations company in Kuala Lumpur is looking for a dedicated R&D Assistant to aid in the research and development of new bakery products. The candidate will prepare raw materials, follow strict production procedures, and maintain documentation of the R&D process. Ideal applicants should have a skill certificate in Bakery or Pastry, strong knowledge of baking and food science, and the ability to adapt in a fast-paced environment. Proficiency in Microsoft Office is essential.
Assist in the research and development of new bakery products, including recipe formulation, product testing, and continuous improvement.
Prepare and weigh all required raw materials, tools, and equipment according to the Research & Development (R&D) plan.
Strictly follow experimental formula to produce small batch samples (such as dough mixing, fermentation, shaping, baking etc).
Testing different process flows to find the optimal production method.
Maintain detailed records and documentation of the R&D process, including records the formula, process flow, key operation points, and sensory evaluation of the finished product for each trial in detail and accurately.
Standardize number, label, and storage of the produced samples.
Establish sample archived, including production date, formula version, storage conditions, and other information.
Responsible for the inventory management of the R&D lab’s raw materials, including receiving, storage, issuance, and stock taking.
Responsible for the whole production line to support the outlet operation needs.
Responsible for the daily cleaning, maintenance, and basic upkeep of the R&D lab equipment.
Posses skill certificate Bakery or Pastry, or relevant qualification in Food Science, Culinary Arts, or a related field.
Strong knowledge of baking techniques, ingredients, and food science principles.
Understand food safety production standard.
Proficient in operating Microsoft Office (Word, Excel) for data recording and document processing.
Highly sensitive to parameters such as weight, temperature and time.
Passion in baking and willing to engage in hands‑on practice.
Able to adapt to fast pace and multitasking nature of R&D work.
Able to read and write in English and Mandarin for preparation of recipe and ingredient.
