Job description

We are seeking an experienced Production Manager to lead and oversee end-to-end production processes for our coconut-based product lines, including Santan, DC, and CWC. This role requires strong technical expertise in food processing, compliance with food safety standards, and the ability to manage production planning and operational excellence.

KEY RESPONSIBILITIES

• Production Process Management: manage and optimize end-to-end production processes from raw material handling (Bodega) to packaging.
• Ensure accurate production planning, including line balancing and resource allocation.
• Oversee specialized processes:
  • Santan Line: Grinding, Extraction, Pasteurization, Sterilization/UHT, Homogenization, Aseptic Tank, Aseptic Filling Machine.
  • DC Line: Blanching, Drying, Cooling, Filling DC, Flatter & Metal Detection.
  • CWC Line: Filter Separator, Evaporator, UHT, and Filling.
• Implement and monitor CIP (Clean-In-Place) and COP (Clean-Out-of-Place) systems, ensuring compliance with parameters such as pH, concentration, flow, and temperature for caustic, acid, and water cleaning cycles.

QUALITY & MICROBIOLOGY CONTROL

• Ensure compliance with organoleptic, chemical, and microbiological analysis for all production lines and finished goods.
• Identify and control microbial risks, understanding patterns and root causes of contamination or unsterile cases.

FOOD SAFETY & COMPLIANCE

• Maintain compliance with FSSC 22000 (minimum version 6.0, preferably 7.0).
• Implement BPOM Risk Management, Thermal Validation, and certifications for Halal and Kosher standards.
• Drive continuous improvement in food safety practices across all production lines.

• Minimum 5+ years of experience in food manufacturing, preferably in coconut-based products.
• Strong knowledge of food safety standards, microbiology, and thermal processing.
• Proven leadership skills with the ability to manage cross-functional teams.
• Excellent problem-solving and analytical skills.
