- Plan and design menus for all dining venues on board, ensuring a variety of options that cater to different dietary needs and preferences
- Oversee food purchasing, inventory management, and cost control to ensure budgetary goals are met
- Train, manage, and motivate a team of chefs, cooks, and other kitchen staff to maintain high standards of food quality and service
- Monitor and maintain kitchen hygiene and sanitation standards, following all health and safety regulations
- Collaborate with other departments, including food and beverage, to ensure seamless coordination and delivery of dining services
- Stay updated on current food trends and incorporate them into menu planning and food presentation
- Conduct regular food tastings and provide feedback to chefs and kitchen staff for continuous improvement
- Oversee the maintenance and cleanliness of all kitchen equipment and facilities
- Handle any guest complaints or concerns related to food quality or service and take appropriate action to resolve them
- Create and manage departmental budgets, forecasting expenses and revenue to ensure profitability
- Participate in regular meetings with senior management to discuss departmental performance and make recommendations for improvement
Qualifications:
- Minimum of 5 years of experience as an Executive Chef in a high-end restaurant or luxury hotel
- Culinary degree or equivalent training and experience in the culinary field
- Strong leadership and management skills, with the ability to motivate and inspire a team
- Knowledge of various cuisines and cooking techniques, as well as current food trends
- Excellent time management and organizational skills
- Ability to work in a fast-paced and high-pressure environment
- Strong communication and interpersonal skills
- Knowledge of health and safety regulations and procedures
- Proven track record of managing budgets and controlling costs
- Ability to adapt to changing situations and make quick decisions
- Fluent in English, both written and verbal
- Willingness to work long hours and weekends as needed
