About the job

Based Mandarin Oriental Jakarta, the Commis de cuisine is responsible for assisting senior chefs in food preparation and other related tasks. The Commis de cuisine reports to the Sous Chef (Li Feng – Chinese Restaurant).

As Commis de cuisine, you will beresponsiblefor the following duties:

1. Daily Operational
  • Supervise the assigned station within Li Feng – Chinese Restaurant, ensuring efficient management according to established concept statements
  • Oversee assigned kitchen trainees
  • Prepare menus using quality, available, and seasonal ingredients, and complete daily and weekly market lists
  • Perform opening and closing procedures for the assigned station.
  • Carry out additional duties as reasonably requested by the Executive Chinese Chef (Li Feng – Chinese Restaurant)
2. Productivity
  • Organize food production in a cost effective and hygienic manner
  • Identify opportunities for reducing costs without affecting the level of service or product received by our guests
  • Identify opportunities for improving the efficiency of the operation of the assigned workstation that will benefit our guests
3. Safe and Sound (HACCP)
  • To ensure that the Fire Life Health Safety and Security company standards and HACCP Standards are maintained and carried out. They must be monitored regularly to assist in scoring 100% on the MOHG health and safety audit
  • Control all efforts that our entire superior Safe and Sound codes are always in place
4. People
  • Use the Colleague Handbook in understanding the consistent way of Communicating Rules & Regulation to our team
  • To supervise the assigned kitchen trainees
  • Develop skills and knowledge in food preparation and presentation

As Commis de cuisine, weexpectfrom you:

Educational Background
  • High School Diploma or Equivalent
  • Two-year degree or Apprenticeship
Experience
  • Minimum of 1 year experience in the same position (Commis Chinese Restaurant), preferably within the hospitality industry
Skills & Competencies
  • Thorough knowledge of gastronomy
  • Extensive knowledge of kitchen equipment
  • Working knowledge of computers and basic software
  • Ability to dictate responsibility, pay attention to detail, handle multiple tasks and show a high level of patience
  • Possess a good written and verbal command of English Language
  • Possess a pleasant and outgoing personality
  • Passionate, creative and an excellent hand on trainer
Technical Proficiency

Physical Requirements
  • Stand/Walk 8 - 12 hours a day
