Responsible for heavy-duty cleaning of the kitchen, including sweeping, mopping, and equipment detailing. Also responsible for washing dishes, flatware, cutlery, crockery, and kitchen vessels. Maintains the kitchen, dishwashing, and back areas in an inspection-ready condition according to Hard Rock standards.

1. Ensures kitchens, freezers, bars, and storage areas are clean, well-maintained, and organized at all times.
2. Ensures floors are dry, clean, and sanitized.
3. Operates pot-washing machinery and maintains a hygienic environment.
4. Delivers clean china, glassware, and silverware to stations.
5. Removes trash following established procedures and maintains a sanitary dumping area.
6. Empties, cleans, and disinfects drains and grease traps.
7. Performs general cleaning, including sweeping, mopping, and rubbish disposal.
8. Cleans and sanitizes pots, pans, utensils, and equipment.
9. Disinfects food preparation surfaces and polishes surfaces as needed.
10. Ensures a safe, clean, and sanitary work environment.
11. Cleans large equipment as assigned.
12. Adheres to MSDS guidelines for chemical safety.
13. Maintains equipment and checks chemical levels.
14. Washes, sorts, and stores dishes and utensils properly.
15. Reports maintenance or hazards to supervisors.
16. Maintains cleanliness and safety standards.
17. Completes mandatory compliance training within 30 days and annually.
18. Performs various kitchen duties based on operational needs.

• High school diploma or GED.
• Ability to follow directions and recall details.
• Attention to detail and high energy level.
• Excellent interpersonal and communication skills.
• Proficiency in operating industrial dishwashers.

Mandatory compliance training within 30 days of hire, including courses on active shooter awareness, safety, hazard communication, responsible gaming, Title 31, PCI fraud prevention, and sexual harassment.

Physical demands include standing, walking, lifting, pushing, pulling, and other activities at various environmental conditions. The job requires very heavy physical effort.
