We are seeking a skilled Sushi Chef to join our kitchen team, working closely with the Head Chef to manage ingredients, maintain stock, and deliver high-quality Asian cuisine. The ideal candidate will have experience in Asian cooking and a keen eye for detail, contributing to a dining experience that reflects excellence in both flavor and presentation.

Requirements
  • Matric certificate
  • Culinary Diploma
  • Approximately 4 years experience in a senior chef role
  • Previous experience as a Sushi Chef or in an Asian restaurant setting
  • Solid understanding of various sushi types and rolling techniques
  • Own transport and valid drivers license
  • Ability to work quickly without compromising accuracy
  • Strong leadership and team management skills
  • Comfortable working collaboratively in a team environment
  • Basic computer skills (Word, Excel, Outlook)
  • High attention to detail and quality
  • Willingness to work evenings, weekends, and public holidays
Key Responsibilities
  • Prepare a diverse sushi menu using a variety of fresh ingredients, including raw fish such as salmon, tuna, and unagi.
  • Cook appetizers, soups, and salads in line with Japanese culinary principles.
  • Lead kitchen staff in the absence of the Head Chef, ensuring smooth operations.
  • Collaborate with front-of-house staff to accommodate special requests and dietary requirements.
  • Train and mentor junior kitchen staff in food preparation, cooking techniques, and plating standards.
  • Monitor all food preparation and presentation to maintain quality and consistency.
  • Manage kitchen inventory, ensuring ingredients are properly stored, dated, and maintained.
  • Minimize food waste and assist in budget management.
  • Support ongoing kitchen organization, staff development, and training initiatives.
