Job summary

A cruise line is seeking an experienced sushi chef to prepare a variety of sushi dishes and supervise junior chefs on board. Candidates should have at least 2 years' experience in a high-volume environment and possess a strong knowledge of Japanese cuisine. The position requires excellent knife skills and the ability to work in a fast-paced setting, with flexible working hours including evenings and weekends.

Qualifications

  • Minimum 2 years of experience as a sushi chef in a high-volume restaurant or hotel.
  • Strong knowledge of sushi techniques and Japanese cuisine.
  • Fluency in English, additional languages a plus.

Responsibilities
  • Prepare and cook a variety of sushi dishes, including nigiri, maki, and sashimi, according to established recipes and standards. On Board Cruise Ship
  • Ensure all sushi dishes are prepared and presented to the highest quality and visual standards
  • Train and supervise junior sushi chefs in proper techniques and procedures
  • Maintain inventory and order supplies as needed
  • Ensure compliance with all food safety and sanitation regulations
  • Collaborate with other chefs and kitchen staff to develop new menu items and specials
  • Assist with menu planning and cost control measures
  • Maintain a clean and organized work station at all times
  • Follow all company policies and procedures, including uniform and grooming standards
  • Participate in onboard events and activities as needed
Qualifications
  • Minimum 2 years of experience as a sushi chef in a high-volume restaurant or hotel
  • Culinary degree or equivalent experience preferred
  • Strong knowledge of Japanese cuisine and sushi techniques
