Responsibilities
- Ensure efficient and personalized guest service meeting and exceeding Relais & Chateaux and AAA 4 & 5 Diamond and Forbes Standards.
- Be an engaged participant and leader of a team that strives for excellence and delivers the best possible culinary experience to our guests.
- Support and assist the Pastry Chef in all aspects of the daily operation of the Pastry Shop.
- Participate in production of menu items, staff supervision, training, mentoring, menu planning and launches, ordering and inventory, and administrative tasks.
- Participate in events as directed by the Pastry Chef.
- Attend Kitchen Leadership meetings on a weekly basis, as well as other meetings as required.
- Be actively involved in development and execution of monthly departmental meetings.
- In the absence of the Pastry Chef, be the leader responsible for all items relating to the Pastry Shop.
- Supervise and manage employees while overseeing day-to-day operations.
- Demonstrate a strong understanding of team member roles and perform duties when necessary.
- Encourage and foster mutual trust, respect, and collaboration among colleagues.
- Serve as a role model by demonstrating professionalism and appropriate behaviors.
- Monitor and support employee productivity to ensure operational efficiency.
- Clearly communicate expectations and performance standards to all colleagues.
Qualifications
- Knowledge of, and the ability to meet and exceed, Relais & Chateaux and AAA 4 & 5 Diamond and Forbes standards.
- Previous experience in a similar position/level in a fine dining establishment or similar experience.
- BC Foodsafe or the equivalent.
- A Journeyman/Red Seal Certification, Cook's trade certification an asset.
- Strong leadership, coaching, and training abilities.
- A team-player mindset with the ability to train, coach, build relationships, and motivate colleagues.
- Excellent communication skills, both verbal and written.
- Strong interpersonal skills with proven problem-solving abilities.
- Superb time management and organizational skills and exceptional attention to detail.
- Practical knowledge of productivity, labor cost, food inventories, and food cost management.
- Commitment to maintaining food preparation, handling, and proper storage standards.
- A solid understanding of safe work and sanitation practices.
- Experience implementing and supporting effective food and waste control measures.
- The ability to function with a calm and controlled demeanor in a fast-paced environment while meeting deadlines.
- Flexibility in accommodating dietary requirements, special requests, and last-minute menu changes without compromising standards.
- A desire to contribute exciting and innovative ideas towards the ongoing improvement of the Pastry Shop and the Wickaninnish Inn as a whole.
- A strong understanding of local products and current culinary and pastry trends.
- An ability to make a 2-year commitment in this position.
Salary/Wage: $57,000 per year
