Overview

CDP Pastry; Take care of both bread as well as pastry shop area extremely successfully. This role prepares the proper amount of food according to production or projection sheets and production strategies, and prepares items according to established dishes for a regular product. It also involves learning and preserving standards in food production and quality.

Responsibilities
  • Quicken orders in a prompt fashion
  • Practice outstanding operational sanitation
  • Execute scheduled banquet features
  • Check and date all shipments, reporting any variations to the chef in charge
  • Validate that all coolers are at the proper temperatures and cleaned daily
  • Monitor stock rotation to maintain fresh items with little or no waste
  • Prepare stock appropriation and obtain supplies as needed for high quality production
  • Coordinate tool/fix requests with the cook in a prompt fashion
  • Incorporate safe work practices in job efficiency
  • Carry out other responsibilities as needed
  • Examine food handling and storage procedures wherever food is handled
  • Control food waste
  • Adjust mise en place and food requisitions to the daily guest count (where applicable)
  • Inspect all tools in your area and report to the Exec. Chef
  • Delegate work to juniors in a prompt way
  • Check food storage area daily; ensure food is properly rotated and first in is first out
  • Examine cleanliness and proper storage of food and tools in all areas of food production
  • Examine all requisitions in your area of duty and discuss with your direct supervisor
  • Discuss all provisions-related issues directly with your supervisor
