Chef de Cuisine

Key Responsibilities

Reporting to the F&B Manager, responsibilities include:

  • Prepare and cook various cuisines for daily menus and banquets, using skill, creativity, and cost-effective methods.
  • Ensure food preparation follows standardized recipes and quality standards.
  • Supervise and oversee all food operations.
  • Maintain a hands-on cooking approach during busy service times and train kitchen staff daily.
  • Interview, hire, and train kitchen team members on policies, safety, and sanitation.
  • Manage kitchen teams across multiple outlets.
  • Achieve financial targets through purchasing, inventory, and cost controls.
  • Collaborate with F&B Manager to develop operations.
  • Ensure compliance with health and safety regulations.
  • Develop menus for restaurants, banquets, and special events throughout the year.
  • Perform other duties as assigned.

Qualifications

  • Minimum 3 years culinary experience in a hotel environment.
  • At least 1 year in a similar role is preferred.
  • Apprenticeship or college accreditation, Red Seal or equivalent.
  • Proven experience in menu and service design.
  • Strong cost control skills.
  • Knowledge of current culinary trends.
  • Excellent communication skills.
  • Leadership skills with a hands-on approach and focus on team development.
  • Experience in a unionized environment is an asset.
  • Strong customer service orientation and ability to create a positive guest atmosphere.
  • Organizational skills, ability to multitask, and work under pressure.
  • Flexibility to work various shifts, including early mornings, evenings, weekends, and holidays.
