Attend menu presentations and provide assistance with photos of meals. Ensure the correct calculation with the applicable load ratios are applied. Ensure recipes are captured on the online system, check recipes for weights, etc., and ensure that the pictures match. Inform the Production Manager of any anomalies with the recipes.
Perform all menu costing according to airline documentation and menu development, including standard cost development. Complete post‑presentation costing with airline load scales in order for billing to be adapted accordingly.
Liaise with procurement and menu development regarding the selection and pricing of raw materials, bearing in mind the seasonality of products and volumes that will determine and influence the contract price with a supplier.
Create airline specifications according to customer requests on the online system. Manage online system menu changes, specifications and costing to ensure accurate implementation and analysis of new menu items. Provide menu change support to all internal parties to ensure client expectations are met.
Compile menu specifications, menu sensory & plating guides according to the customer request. Compile menu sensory & plating guides for various airlines when required.
Compare menu specifications, costing details and airline documentation to ensure they all tally. Ensure the Financial Profit and Loss statement is completed for each airline according to the customer deadline.
Ensure proposed customer changes meet business strategies through accurate pricing and liaison with procurement, pricing, finance and operations teams.
Respond to internal airline comments and change requests in a timely manner with a 48‑hour period from receipt of the comment or request. Update internal memo for cycle change sheet and inform all stakeholders. Any other reasonable task that may be required by management.
