As our new Hygiene Manager, you’ll play a key role in ensuring that our guests enjoy a safe, clean, and exceptional experience across all areas of the hotel. From maintaining the highest hygiene standards to leading audits and ensuring full compliance with health and safety regulations, you’ll be at the forefront of creating a spotless and welcoming environment.

A little taste of your day‑to‑day:
  • Fully familiar with local Food Hygiene and FSMS guidelines.
  • Maintain all Food Safety and Hygiene‑related records, forms, checks, and audits.
  • Conduct hygiene audits for all kitchen associates and provide clear feedback.
  • Perform regular spot checks on received food items to identify any temperature abuse.
  • Demonstrate strong decision‑making and problem‑solving skills.
  • Inspect all food holding and transport equipment to ensure compliance.
  • Ensure all food items in storage are properly covered, dated, and labeled.
  • Checking the rotation of foods and ensuring FIFO is followed.
  • Conducts daily kitchen inspections on personal, environmental, and food hygiene conditions, provides a corrective action plan, and maintains records of all findings.
  • Checks daily cleaning status in all kitchens with the respective kitchen managers and stewarding team.
  • Ensures the temperature of refrigerators and freezers is maintained according to standards.
  • Coordinates microbial food tests with the kitchens and laboratory for new products, new suppliers, or in cases of suspected foodborne illness complaints.
  • Conducts vendor inspections together with the Purchasing team and Executive Chef.
  • Liaises with the Pest Control Company and Housekeeping for any pest issues and reviews their performance regularly.
  • Maintains and continuously improves hygiene standards across all operations.
  • Maintains complete documentation of all hygiene and food safety standards throughout the operation.
  • Works closely with the Training Manager and conducts Food Handlers Training sessions for all food handlers.
What We need from you:
  • Bachelor’s degree / higher education qualification / equivalent in hygiene management.
  • 4+ years’ related experience, including management experience.
  • Must speak local language.
  • Must obtain certifications or permits as required by local governmental agencies.
