About the Job
An opportunity has arisen for Chef De Parite (Sushi Specialty) for Kitchen Department to join Jumeirah Group.
The main duties and responsibilities of this role:
Actively manages all aspects of the sushi section, and delegates tasks to junior kitchen staff to ensure smooth and efficient operation, in line with the quality standards set by the Chef de Cuisine.
Oversee sushi service during peak periods, and in the absence of senior chefs, ensures the section runs seamlessly while maintaining all quality and hygiene standards.
Assists the Chef de Cuisine / Sous Chef in developing new sushi menu items, ensuring creativity, seasonality, and the use of premium ingredients, including fresh fish and authentic Japanese components.
Ensures full compliance with Health, Safety, and Food Hygiene regulations, particularly in the handling, storage, and preparation of raw fish and seafood.
Plans and conduct sushi-specific training sessions for team members, ensuring skill development in areas such as knife handling, rolling techniques, fish cutting, and presentation.
Maintains cleanliness and organization of the sushi station, including proper sanitation of knives, boards, and refrigeration units in accordance with culinary standards.
