Your purpose
  • Produce dishes on time and to the expected standard, ensuring that each item that reaches the pass is correctly garnished and portioned, presented on the prescribed serving dish.
  • Maintain levels of control regarding food hygiene and safety including HACCP at all times.
  • Ensure sufficient mise in place is produced for each service and that any unused items are correctly labelled and stored.
  • Effectively manage stock and ensure that food is kept under optimum conditions.
  • Ensure that any anticipated shortages, missing items or menu updates are communicated promptly to the Front of House team.
  • Display the highest standards of cleanliness and organisation of both your station and the Kitchen in general.
  • Manage the Pastry Kitchen, from service to team management and training.

  • Ensure licensing laws are abided, including measures and legal age requirements.
  • Report all faulty equipment, machinery and service-ware to the management team.
