Job description
Roles & Responsibilities
  • Supervise daily seafood processing operations, including cleaning, cutting, filleting, packaging, and stocking.
  • Ensure all seafood products meet quality, freshness, and hygiene standards.
  • Monitor and train staff on proper handling, cutting techniques, and food safety practices.
  • Plan and assign work schedules to ensure smooth workflow and efficiency.
  • Implement proper storage methods and monitor product shelf life according to food safety regulations.
  • Maintain accurate inventory records and oversee stock rotation to minimize wastage.
  • Handle client or chef requirements, ensuring orders are fulfilled accurately and on time.
  • Verify supplier deliveries against purchase orders to ensure correct quantity and quality.
  • Enforce strict workplace cleanliness, hygiene, and equipment maintenance standards.
  • Provide guidance and resolve issues raised by staff or customers.
  • Support management in achieving production targets and operational goals.
  • Perform other supervisory duties as assigned by senior management.
Requirements
  • Proven experience in seafood processing, with knowledge of fish cutting, filleting, and handling techniques.
  • Prior supervisory or team leader experience in food production/processing preferred.
  • Strong leadership, communication, and problem-solving skills.
  • Good knowledge of food safety, hygiene, and storage regulations.
  • Ability to train and motivate staff to maintain high standards of performance.
  • Physically fit, able to handle seafood stock and lift boxes up to 20kg.
  • Willing to work on weekends, shifts, and public holidays when required.
  • Basic understanding of seafood cooking or culinary use is an advantage.
