Overview
As a Captain (Bar, Restaurant, Banquet), you will play a crucial leadership role in ensuring a smooth and exceptional dining experience in the bar, restaurant, and banquet areas at Bobobox FnB business. You will be responsible for coordinating smooth service operations, supervising team performance, and maintaining excellent service standards.
Responsibilities
- Handle guest inquiries, special requests, or complaints with professionalism, discretion, and a solution-oriented mindset.
- Manage daily floor operations, including table assignments, service sequence, and pacing of courses to ensure smooth service.
- Coordinate with the kitchen and bar to time the delivery of food and beverages appropriately.
- Monitor service speed and staff responsiveness to prevent service delays or bottlenecks.
- Supervise and guide servers, runners, and bar staff during service to ensure attentiveness, grooming standards, and knowledge of menus.
- Ensure the restaurant/bar/banquet area is properly set up before service, maintaining cleanliness, orderliness, and standards.
- Monitor inventory level for service tools (e.g., menus, POS device, linens, condiments) and coordinate with relevant departments to stock.
- Support the enforcement of hygiene and safety protocols as per regulatory standards.
- Liaise closely with chefs and bartenders to stay informed about menu items, ingredients, preparation times, and potential out-of-stock items.
- Maintain clear communication through shift reports, noting guest feedback, and operational issues.
- Ensure smooth handovers between shifts to maintain service continuity.
You will fit in this job if you meet the following qualifications
- Diploma or bachelor’s degree in hospitality management, hotel & restaurant management, or related field (preferred).
- Proven experience as a captain, supervisor, or similar leadership role in a fine dining restaurant or high-end banquet operation.
- Strong understanding of restaurant, bar, and banquet service standards and protocols.
- Skilled in table assignment planning, service sequencing, and floor management.
- Familiarity with hygiene, safety, and sanitation regulations in F&B operations.
- Ability to lead, motivate, and coach a diverse service team to deliver level service.
- Strong ability to manage multiple service areas simultaneously.
- Conflict resolution skills for handling guest complaints and team challenges calmly.
- Excellent verbal communication in Bahasa Indonesia and English; additional languages are an advantage.
- Strong problem-solving abilities and adaptability in fast-paced, high-pressure situations.
