Job description
Overview

To support the Central Production Unit (CPU) in delivering and assisting in preparation, processing, chilling or freezing of raw materials in accordance with strict procedures, using high-volume cooking and chilling/freezing equipment. The post holder will report to the Kitchen Superintendent/Production Manager and will use own initiative within standard operating procedures, referring to the supervisor when necessary. Detailed control of time and temperature in the transportation of food items.

Responsibilities
  • Undertake cleaning duties as detailed by the supervisor in line with legislative requirements and department schedules.
  • Carry out duties in the CPU sections including preparation and cleaning duties.
  • Assist in the delivery of all frozen and dry goods, receive stores, rotate stock, issue stores and operate heavy equipment as required.
  • Clean and store equipment, provisions, crockery, cutlery and utensils in a safe and hygienic manner.
  • Perform periodic cleaning of areas (e.g., walls) according to departmental specifications and schedules.
  • Observe and maintain high standards of personal hygiene, confidentiality, courtesy and consideration to all staff.
  • Ensure equipment is maintained and cleaned according to the cleaning schedule, including floors and walls as requested by the supervisor/production manager.
  • Be trained to operate dishwasher/pot-wash and related wash-up equipment, scrubber machines and pressure cleaners.
  • Safely operate and conduct serviceability checks on cleaning equipment, including ovens, dishwashers, scrubber machines, vacuum cleaners and high-pressure hoses.
  • Accurately complete documentation recording temperatures and cleaning schedules.
Qualifications and requirements
  • Knowledge of food handling legislation and infection prevention and control measures.
  • Willingness to operate in a kitchen environment and follow safety protocols.
