About Wynn Al Marjan Island

On schedule to open in the United Arab Emirates in early 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.

About The Position

Wynn Al Marjan Island is currently seeking a Head Butcher to join the resort’s Butcher Shop team.

The Primary Duties And Responsibilities Of This Role Are
  • To ensure that the quality levels of kitchen production and presentation are always maintained at the highest level.
  • To attend the daily kitchen briefings
  • Ensure menus are regularly updated and reflect seasonal changes in alignment with the menu cycles.
  • Update all recipe manuals whenever menu changes occur, and engineer pricing to maintain consistency with Resort Food Cost standards.
  • Participate in the service of special functions or events organized by the resort.
  • Coordinate closely with the Food & Beverage department on relevant functions and activities.
  • Foster and maintain smooth working relationships and personal rapport within the kitchen team.
  • Conduct regular spot checks to identify and remove expired items.
  • Label all food products in accordance with hygiene and sanitation policies.
  • Oversee physical asset inventories as needed.
  • Make sure all equipment is cleaned either as necessary or according to scheduled maintenance.
  • Create and sustain a working environment that embodies a strong sense of place.
  • Follow all rules and regulations when operating resort buggies.
  • Carry out performance appraisals for kitchen staff.
  • Support the recruitment process for new kitchen employees.
About You

The ideal candidate for this position will have the following experience and qualifications:

  • In-depth understanding of food safety practices, HACCP principles, and UAE food safety regulation
  • Expertise in halal butchery practices and familiarity with local and international meat grading standards
  • A minimum of 5 years’ experience in a high-end restaurant, hotel, or cruise-ship environment with exposure to various catering styles and services (e.g. a la carte, buffet) is required
  • Food Handlers Certification Required: professional butchery certification preferred
  • Shows integrity in all his/her dealings with others
  • Recognizes barriers within teams quickly and can remove them
