FNB & Quality Management Assistant Manager

We are looking for a strategic Group FNB & Quality Management Asst. Manager to lead and expand our Indonesian restaurant portfolio. You will be responsible for concept innovation, operational excellence, and ensuring the authentic taste of Indonesia is delivered consistently across all units.

Responsibilities
  • Design and launch diverse F&B concepts that integrate traditional Indonesian culinary themes.
  • Oversee all F&B units, including restaurants and central kitchen.
  • Guarantee consistency in flavor, texture, and portioning across all branches through strict adherence to standardized recipes.
  • Control kitchen audits to ensure all branches comply with SOPs, Health & Safety (HACCP), and Halal certification requirements.
  • Partner with Executive Chefs for menu engineering and pricing strategies that balance authenticity with profitability.
  • Lead and develop cross-functional F&B teams across multiple cities/locations.
  • Ensure top-tier standards for product quality, service, and regulatory/Halal compliance.
  • Drive revenue and foot traffic through creative events and seasonal promotions.
Qualifications
  • Bachelor’s Degree in Hospitality Management or Food Science and Technology or a related field.
  • 5–10 years in F&B and Quality management specifically overseeing multi‑unit restaurant groups.
  • Proven track record in F&B business development and a deep understanding of the Indonesian dining market.
  • A comprehensive understanding of HACCP, ISO 22000, Halal certification requirements, and applicable regulations in the FNB industry.
  • Familiarity with COGS (Cost of Goods Sold) and waste management.
  • Proficiency in using digital audit apps and inventory management systems.
  • Strong leadership, financial literacy and excellent communication skills.
  • Must be willing to travel frequently to various cities/branches.
