Job details

We are looking for an experienced Head Chef to lead the kitchen of a new restaurant project with a strong focus on raw cuisine and Asian-French fusion. This role is ideal for a chef who values product quality, flavor precision, and clear culinary vision, and who enjoys working within a defined concept while bringing their own creative identity to the menu.

Key Requirements
  • Proven experience as Head Chef or Senior Sous Chef in quality-driven restaurants
  • Strong knowledge of Asian cuisine (Japan / Korea / Southeast Asia experience is a plus)
  • Confident work with raw products and seafood, including: fresh fish and shellfish, oysters and sea urchins (handling, preparation, presentation)
  • Solid understanding of French culinary techniques, especially sauces and classical foundations
  • Ability to create balanced fusion dishes (not chaotic or trend-driven)
  • Strong sense of taste, texture, and product respect
  • Experience developing concise, well-structured menus
  • Leadership skills and ability to manage and train a kitchen team
Responsibilities
