Job summary

A hospitality and attractions company is seeking a Chef de Partie Pastries for a seasonal full-time role in Banff. The successful candidate will ensure excellent guest experiences through the preparation of fine dining pastry dishes and will be responsible for leading kitchen staff, supervising preparations, and maintaining health protocols. Experience in high-volume food service and a Journeyman’s Red Seal or equivalent is preferred. This role offers opportunities to engage in various culinary tasks and develop skills in a vibrant environment.

Qualifications

  • 1-3 years’ management experience in high-volume food service.
  • Experience in demonstration of pastries.

Responsibilities

  • Prepare and execute fine dining pastry dishes.
  • Supervise and coordinate pastry preparation at the Banff Gondola.
  • Ensure adherence to Health and Safety protocols.

This job is posted as part of our seasonal hiring for Spring/Summer, 2026, it will be a full time seasonal role.
Role & Responsibilities

The Chef de Partie Pastries will provide excellent guest experiences through the consistent preparation and focused execution of food items. Successful candidate will operate in a manner that provides a safe and enjoyable experience for the guest, co-workers and self.

  • Acts with integrity, honesty and knowledge that promotes the culture, values and missions of Pursuit
  • Ability to create and execute fine dining pastry dishes
  • Inspirationally lead and train kitchen personal
  • Supervise / coordinate the preparation and all pastries at the Banff Gondola
  • Provide culinary instruction and demonstration of culinary techniques
  • Order to forecasted volumes and specify budgets
  • Select and develop standardized recipes to ensure consistent quality
  • Maintain/audit presentation technique and quality standards
  • Ensure all Health and Safety protocols are being adhered to as per AHS guidelines
  • Oversee special catering events
  • Meet or exceed forecasted/budgeted COGS/LTR and operational budgets (expenses)
  • Works within inventory control systems including daily updates to ensure accuracy
  • Complies with Pursuit Branded policies and procedures
  • Follows Pursuit pillars of employment and service
  • Comfortable guest facing and tableside interactions
  • Flexible to work in various locations
Required Skills & Qualifications
  • Journeyman’s Red Seal preferred, or equivalent
  • 1-3 years’ management experience in a high-volume food service and restaurant operation
  • Experience in demonstration of pasties
  • Experience in menu writing, development and costing
  • Strong background in high volume and production
  • Ability to manage in a diverse environment with focus on customer service
  • Experienced and proficient in the latest sanitation and HACCP standards
  • Ability to control operating costs – labour and food
  • Computer literacy is essential
  • Being an effective administrator through inventory programs
  • Highly organized with the ability to create consistency without compromising creativity
  • Comfortable working on your feet for extended periods of time
  • Adhere to the Pursuit grooming policy
  • Standard first-aid or higher is an asset
