About The Position
The Wine Manager forms part of the F&B leadership team who collectively make key strategic and operational decisions for the division. This role ensures the seamless operation of all wine programs across restaurants and bars at Wynn Al Marjan Island and oversees the upkeep of every wine list. The primary duties include delivering top-tier wine quality and service to guests, developing and managing bar and sommelier teams, striving to achieve the annual budget, and carefully monitoring labor costs and operating expenses for all wine-related operations.
Responsibilities
- Establish par levels for supplies, for wine and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business.
- Oversee implementation of policies, operating procedures, training programs, directives, menus, rules and regulations for the beverage/wine staff and personnel.
- Work with the Executive Director, Beverage/Assistant Director, Beverage on work schedules.
- Maintain complete knowledge of all wine selections available in outlets, the characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware, all bar menu items, presentation and prices.
- Work with Brand Partners and Executive Director, Beverage/Assistant Director, Beverage to review and establish standards, staffing levels, recruitment strategy, alignment with hotel policies and SOPs, etc.
- Maintain the highest standards of health, sanitation and cleanliness within all areas of Beverage/Wine. Maintain complete knowledge and strictly abide by state liquor regulations.
- Manage wine inventory and cost control.
- Design and direct special event wine service set-up, working closely with the special events and banquets team.
- Be aware of internal and external conditions and industry innovations and best practices and apply this knowledge as appropriate in managing the organization's wine operations.
- Responsible for maintaining the financial performance of the wine programs and conducting P&L analyses.
- Work with the Executive Director, Beverage/Assistant Director, Beverage to manage the annual budget for the wine operation, including all wine related revenue and cost accounts.
- Monitor the execution of key operational processes, such as training, quality control, steps of service, inventory and ordering processes.
- Any other tasks / duties as assigned.
About You
The ideal candidate for this position will have the following experience and qualifications:
- Bachelor’s degree or equivalent in Human Resources, Business or Hospitality preferred.
- Minimum 5 years’ experience in managing wine program and volume operations.
- Ability to create innovative and attractive wine programs based on outlet concept and seasonality.
- Proven record of building strong relationships with team members, patrons and managers
- Strong communication and presentation skills.
- Result driven with strong attention to detail and organizational skills.
- Passionate Food & Beverage operator with an in depth understanding of current trend.
