What will I be doing?

As a Chief Steward, you will lead the strategic management and performance of all stewarding-related human capital activities, including talent acquisition, succession planning, and the execution of specialized technical training. You will drive operational excellence by overseeing performance management, ensuring compliance with health and safety protocols, and fostering positive employee relations to maintain the highest service standards at the resort:

  • Lead high-performance teams through continuous training, safety certification, and performance-based succession planning.
  • Engineer operational workflows that ensure seamless equipment delivery and stewarding support during high-volume operational restaurants and banquet events.
  • Uphold HACCP compliance by implementing comprehensive deep-cleaning schedules and maintaining "audit-ready" kitchen environments.
  • Maximize asset ROI by overseeing a preventive maintenance program for all heavy dishwashing and kitchen machinery.
  • Drive departmental profitability by managing the P&L and implementing aggressive cost-control measures for chemicals and labour.
  • Minimize financial loss by executing strict breakage-reduction programs and monitoring monthly operating equipment variances.
  • Master inventory control through rigorous monthly audits and par-level management of all chinaware, glassware, and silver assets.
  • Guarantee product excellence by enforcing meticulous sanitation and polishing standards for all guest-facing equipment.
  • Optimize resource consumption by calibrating chemical dispensing systems to reduce waste while maintaining hygiene standards.
  • Advance sustainability goals by leading waste segregation and reduction initiatives to lower the resort’s environmental footprint and disposal costs.

Requirements / Criteria

As with any job, we do have certain criteria that you will need to meet in order to be considered. These are detailed as follows:

  • Tertiary qualifications or a collegiate-level degree in Hospitality Management, Food & Beverage, or a related field.
  • Proven management experience in stewarding or BOH operations within a high-volume hotel, resort, or large-scale catering environment.
  • Exceptional leadership and communication skills to effectively manage a large, diverse team of stewards and other staff.
  • Strong commercial and business acumen with the ability to analyse P&L statements and manage departmental operational budgets.
  • A passion for operational excellence and the vision to build a winning team focused on hygiene and efficiency.
  • Extensive knowledge of HACCP, local food safety regulations, and chemical handling protocols.
  • Advanced organizational skills to manage complex inventory cycles and event logistics simultaneously.
  • Project and time management skills to oversee deep-cleaning schedules and kitchen renovation or maintenance projects.
  • Proven problem-solving expertise, particularly in high-pressure environments and during peak occupancy periods.
  • Technical proficiency in common office software (MS Apps/Excel/Word) and procurement systems for inventory and budget tracking.
