A renowned Peranakan restaurant in Singapore is seeking a Head Chef to lead kitchen operations. The ideal candidate must excel in Nyonya cuisine, manage a team of sous chefs and kitchen helpers, liaise with suppliers for quality ingredients, and perform well under pressure during events. This role demands dedication to ensuring food quality and customer satisfaction.
Head chef for Peranakan Restaurant
1. Must have knowledge of Nyonya recipes such as Ayam Buah Keluak, Ikan Purut, Tempra Sauce, Sambal Belacan etc.
2. Must be able to control a kitchen with 3 sous chefs and kitchen helpers, including delegation of work, pre-kitchen preparation, control of tastes, etc.
3. Must be able to liase with designated suppliers on food supplies, food costs, freshness and quality of supplies.
4. Must be able to perform under pressure during corporate events, functions, etc. Able to put in extra time in ensuring all preparation and food is satisfactory before each function and event.
