We’re seeking a passionate and highly motivated Junior Sous Chef to join the kitchen team within a premium countryside hospitality destination. This is an excellent opportunity for an ambitious chef to support high-quality, produce-led cooking across the estate while developing leadership skills and contributing to menu creation rooted in British and European culinary traditions.

Key Responsibilities
Kitchen Leadership & Service Support
  • Support the Chef Director and senior chefs in delivering exceptional, comforting, seasonal dishes
  • Lead shifts and take responsibility for the kitchen in the absence of senior leadership
  • Maintain strong communication during daily briefings and service coordination
  • Help uphold a positive, collaborative, and quality-driven team culture
Seasonal & Estate-Led Cooking
  • Work closely with the garden and farm teams to utilise home-grown fruit, vegetables, herbs, and estate-reared livestock
  • Contribute to menus that change daily in response to the kitchen garden and seasonal produce
  • Demonstrate passion for local ingredients and countryside-inspired cookery
  • Assist in modern, rustic interpretations of classic British and European dishes
Culinary Skill & Operational Standards
  • Maintain strong knowledge of meat, fish, and vegetable preparation
  • Ensure timely preparation, consistency, and quality across all areas of service
  • Support mise en place, stock rotation, and workstation organisation
  • Follow established SOPs to maintain efficiency, sustainability, and smooth service flow
Health, Safety & Hygiene
  • Uphold all food safety regulations and kitchen hygiene standards
  • Support daily and weekly cleaning routines
  • Maintain practices aligned with industry and regulatory requirements
Teaam Development & Collaboration
  • Work closely with the chef team to support learning, mentoring, and professional development
  • Demonstrate excellent teamwork, communication, and leadership potential
  • Contribute to a supportive, professional, and motivated kitchen environment
Performance Indicators
  • Consistency and quality of dishes produced
  • Smooth service operation when leading sections or shifts
  • Effective use of seasonal and estate-grown produce
  • Adherence to hygiene and safety procedures
  • Contribution to team morale, development, and overall kitchen performance

  • Experience as a strong Chef de Partie or Junior Sous Chef in a high-quality kitchen
