We are currently seeking a skilled and dedicated individual to join our culinary team as a Full-Time Sushi Prep Cook at Nobu Restaurant, Toronto. In this role, you will be responsible for assisting the sushi chefs in the preparation and assembly of ingredients for sushi and sashimi dishes, ensuring the highest standards of quality, freshness, and presentation. Responsibilities:

  • Prepare sushi ingredients according to established recipes and standards, including slicing fish, chopping vegetables, and cooking rice.
  • Ensure all ingredients are fresh, properly portioned, and stored at the correct temperature.
  • Assist in maintaining inventory levels by restocking ingredients and supplies as needed.
  • Keep workstations clean and organized, following food safety and sanitation guidelines.
  • Support the sushi chef during service by assembling sushi rolls, sashimi plates, and other menu items.
  • Assist with the setup and breakdown of the sushi station before and after service.
  • Communicate effectively with other kitchen staff to coordinate food preparation and ensure timely service.
  • Follow proper knife handling techniques and maintain sharp knives for safe and efficient food prep.
  • Adhere to all company policies, procedures, and standards of food quality and presentation.
  • Participate in training sessions and workshops to enhance sushi preparation skills and knowledg.

Qualifications:

  • Previous experience working in a sushi restaurant or Japanese kitchen preferred.
  • Knowledge of sushi preparation techniques and familiarity with Japanese ingredients.
  • Strong attention to detail and commitment to maintaining high standards of food quality and presentation.
  • Excellent communication and teamwork skills.
  • Basic understanding of food safety and sanitation principles
  • Physical ability to stand for extended periods and lift heavy objects.
  • Passion for sushi and Japanese cuisine is highly desirable.
  • Legal right to work in Canada
