Job summary

An authentic South Indian restaurant in Calgary is seeking a Specialty Foods Chef skilled in traditional South Indian cuisine. This full-time position requires a minimum of 3 years' experience and a Cook's trade certification. Responsibilities include preparing a variety of dishes, training kitchen staff, and maintaining high food quality standards. Responsibilities

Tasks

  • Maintain records of food costs, consumption, sales and inventory
  • Create new recipes
  • Instruct cooks in preparation, cooking, garnishing, and presentation of food
  • Supervise cooks and other kitchen staff
  • Prepare and cook food on a regular basis, or for special guests or functions
  • Prepare and cook meals or specialty foods
  • Requisition food and kitchen supplies
  • Plan menus and ensure food meets quality standards

Job Duties:

  • Prepare and cook a full range of traditional South Indian dishes, including but not limited to: dosas, idlis, vadas, sambar, rasam, biryanis, curries, and a variety of regional specialties.
  • Plan and prepare daily menus, ensuring a diverse and appealing selection of dishes.
  • Follow traditional South Indian recipes and cooking methods to maintain authenticity and quality.
  • Monitor food stock and order supplies as needed, ensuring all ingredients are fresh and of high quality.
  • Oversee kitchen operations, including food preparation, cooking, and plating, in a clean and organized manner.
  • Adhere to all food safety and sanitation regulations (HACCP principles, etc.) to ensure a safe and hygienic working environment.
  • Collaborate with the kitchen team to ensure timely and efficient service during peak hours.
  • Train and mentor junior kitchen staff on South Indian cooking techniques and food preparation.
  • Maintain a positive and professional attitude in the workplace.

  • Ability to work under pressure and in a fast-paced environment;
