Tasks
- Maintain records of food costs, consumption, sales and inventory
- Create new recipes
- Instruct cooks in preparation, cooking, garnishing, and presentation of food
- Supervise cooks and other kitchen staff
- Prepare and cook food on a regular basis, or for special guests or functions
- Prepare and cook meals or specialty foods
- Requisition food and kitchen supplies
- Plan menus and ensure food meets quality standards
Job Duties:
- Prepare and cook a full range of traditional South Indian dishes, including but not limited to: dosas, idlis, vadas, sambar, rasam, biryanis, curries, and a variety of regional specialties.
- Plan and prepare daily menus, ensuring a diverse and appealing selection of dishes.
- Follow traditional South Indian recipes and cooking methods to maintain authenticity and quality.
- Monitor food stock and order supplies as needed, ensuring all ingredients are fresh and of high quality.
- Oversee kitchen operations, including food preparation, cooking, and plating, in a clean and organized manner.
- Adhere to all food safety and sanitation regulations (HACCP principles, etc.) to ensure a safe and hygienic working environment.
- Collaborate with the kitchen team to ensure timely and efficient service during peak hours.
- Train and mentor junior kitchen staff on South Indian cooking techniques and food preparation.
- Maintain a positive and professional attitude in the workplace.

- Minimum of 3 years of experience as Chef specializing in traditional South Indian cuisine req’d;
- Cook's trade certification or equivalent credentials, training and experience are required;
- Deep and comprehensive knowledge of South Indian cooking techniques, including use of tandoors, clay pots, and other specialized equipment;
- Expertise in identifying and using a wide variety of South Indian spices, herbs, and ingredients to create authentic flavor profiles;
- Ability to prepare a diverse range of South Indian regional dishes (e.g., from Tamil Nadu, Kerala, Karnataka, Andhra Pradesh, and Telangana);
- Knowledge of traditional food preservation and fermentation techniques relevant to South Indian cuisine;
- Strong understanding of dietary requirements and the ability to accommodate specific customer requests (e.g., vegan, gluten-free, etc.);
- Excellent knife skills and a high level of dexterity;
- Ability to work under pressure and in a fast-paced environment;
- Strong communication and teamwork skills;
- Must be able to stand for extended periods and lift heavy objects;
- A passion for and deep respect for traditional South Indian culinary arts.
