What will you do in this job?

  • Oversee day-to-day operations of the Commissary Pastry Kitchen.
  • Lead and support team scheduling, training, and performance management.
  • Implement and maintain in-house training programs to support pastry team development.
  • Ensure safe, efficient, and responsible use of all kitchen equipment.
  • Production Planning & Execution
  • Plan monthly, weekly, and daily pastry production schedule and par levels based on order volumes from the Banff Jasper Collection (BJC) outlets.
  • Demonstrate experience with similar high-volume programs and the ability to scale production for new locations or seasonal lines of business.
  • Maintain FIFO inventory practices, correct labeling, and proper dating of all items.
  • Procurement & Inventory Control
  • Order adequate ingredients and supplies to meet production needs while controlling costs.
  • Maintain a clean, organized, and safe working environment at all times.
  • Support the team in cleaning and maintaining all equipment and utensils.
  • Comply with all food safety, hygiene, and sanitation standards according to OH&S.
What skills and experience do you need for this job?
  • 10+ years of pastry production experience, preferably in a high-volume commissary or hospitality setting.
  • Strong knowledge of baking and pastry techniques, trends, and ingredients.
  • Proven leadership skills and a collaborative, positive attitude.
  • Food Safe certification is an asset.
  • Ability to lift and carry up to 50 lbs and work on your feet for extended periods.
