Key Responsibilities
  • Plan and direct sushi preparation and overall kitchen activities, ensuring consistency and high standards of Japanese cuisine.
  • Consult with customers regarding special celebrations such as birthdays, anniversaries, and private dining events, and design customized sushi menus.
  • Plan seasonal sushi menus and ensure all dishes meet freshness, presentation, and food safety standards.
  • Estimate requirements for fresh seafood, specialty ingredients (e.g., wasabi, nori, rice), and forecast labour costs during peak service hours.
  • Supervise activities of cooks and kitchen helpers, providing training on sushi techniques, hygiene practices, and plating standards.
  • Arrange for purchase and maintenance of sushi-specific equipment such as sushi display cases, rice cookers, and professional-grade knives.
  • Participate in and assist with the recruitment and training of cooks and kitchen helpers to maintain service quality.
  • Prepare signature sushi dishes, omakase courses, and specialty rolls for both daily service and special guests.
Requirements and Skills
  • Restaurant experience is an asset.

  • Ability to work both fast and accurately; strong team spirit.
  • Availability to work during business hours, including weekends and evenings.
