Job summary

A leading food service company in Dubai is seeking an experienced Procurement and Sourcing Manager. This role will manage procurement strategy, vendor relationships, and cost control. The ideal candidate has 5-8 years of experience in managing OS&E procurement for multi-unit restaurant chains and a strong understanding of the F&B sector. Responsibilities include strategic purchasing, vendor negotiation, and budget management.

Job description
Procurement & Sourcing
  • Develop and implement the OS&E procurement strategy for both new openings and ongoing operations.
  • Source, evaluate, and negotiate with suppliers for items including:
    • Kitchen tools and utensils
    • Disposables and food packaging
    • Cleaning supplies and chemicals
    • Staff uniforms
    • Tabletop items (cutlery, crockery, glassware)
    • POS peripherals and back-office supplies
    • Ensure value-driven purchasing decisions aligned with brand standards and operational needs.
Vendor & Inventory Management
  • Build and maintain strong vendor relationships; negotiate pricing, contracts, and service levels.
  • Maintain and update master OS&E catalogs for all locations.
  • Oversee centralized ordering systems or vendor portals for use by restaurant-level managers.
  • Monitor inventory levels across outlets to avoid shortages or excess stock.
Project Coordination
  • Lead OS&E setup and execution for all new restaurant launches.
  • Collaborate with kitchen designers, project managers, and operations teams on delivery and installation schedules.
  • Manage project-specific checklists, timelines, and store readiness.
Cost Control & Budgeting
  • Own and manage OS&E budgets for both new stores and existing locations.
  • Identify and implement cost-saving opportunities through bundling, standardization, or supplier consolidation.
  • Analyze spend data, track variances, and report on procurement KPIs, trends, and forecasts.
Standards & Compliance
  • Ensure consistency in OS&E specifications across all restaurants.
  • Maintain compliance with brand standards, local regulations, and sustainability goals.
  • Coordinate with Quality Assurance to evaluate and approve new products and suppliers.
Required Qualifications & Core Competencies

Mandatory:

  • 5–8 years of experience managing OS&E procurement for a reputable multi-unit restaurant chain
  • Strong leadership and supplier negotiation skills.
  • Advanced analytical and commercial acumen.
  • Demonstrated drive for results and accountability.
Preferred:
  • Experience working with Asian suppliers (e.g., China, India).
  • Prior experience in the UAE market.
  • Proficiency in e-procurement tools (e.g., Ariba, Coupa, Zycus).
  • Strategic agility and adaptability in a fast-paced environment.
OTHER DUTIES

Regular attendance in conformance with the standards which may be established by the company from time to time, is essential to the successful performance of this position.

Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the organization.

QUALIFICATIONS
  • Bachelor’s degree in Supply Chain, Business Administration, Hospitality Management, or related field.
  • 5-8 years of experience in procurement or supply chain management, preferably in a multi-unit F&B or QSR environment.
  • Good knowledge of restaurant operations and related OS&E needs.
  • Solid understanding of supplier performance and relationship management
  • Proficient in Microsoft Excel, procurement software, and ERP systems.
